No one knows who Korso is. It certainly isn't the old astromech serving drinks. But, C77 has been there as long as anyone remembers, well before Ursae took over. Jaxom Ursae manages the cantina for whomever owns it, whether that's Korso or not. While he hasn't been around for as long as C77, Jaxom has been working at Korso's for years, long enough for everyone to forget who ran the place before him.

Korso's isn't a memorable place overall. It's small and located on a lonely side street. It's the type of place you wouldn't notice unless you were looking for it. It's where the locals go to get lost. Korso's is a place for simple drinks and quiet conversations.
